Eggs in Cream

 
I've been loving getting my eggs from the Farmer's Market.  They are big, and rich, and flavorful.  And though today is bright and sunny, we've had a string of rainy days here in Washington D.C., so I am craving these eggs baked in cream from Sassy Radish.  And there's arugula and tomatoes in it...which I find at the market as well!  They'd be lovely for a weekend brunch.

P.S. I made a pizza with arugula pesto, spring garlic, and fresh feta earlier this week.  Wanting protein, I craked my last two market eggs on top, and popped it in the oven.  Guess what: you can over bake an egg.
