Outside the Box

I am always up to the challenge of dietary restrictions. My roommate, Miss I, has celiac disease. Spoon's daughter can not eat any dairy or peanuts, and my friends D+E couldn't eat gluten, dairy, and red meat. So I really identified with Clotilde Dusoulier in this post about cashew cheese. I too am about as omnivorous as they come (though I do have some limitations), but I love the challenge of cooking for restrictions and creating news ways to eat well inspite of limits. I've been fairly successful with my gluten free baking adventures. So why not try a vegan cheese. I'll let you know when I try it how it turns out.
