I decided to make a slightly different version of pumpkin pie, thanks to this recipe from Heidi Swanson. It's dairy free, because it uses coconut milk instead of cream. I was afraid the coconut milk would be too much, but it was delicious.
Also, she describes the benefits grinding your own spices, and it's totally true, and easy. If you have a coffee grinder, you can grind your own spices, and it makes everything more delicious!
